Hi Jim;
I know exactly how you feel. It's my motivation for me too. I think sometimes I get burned out, so I usually wait it out and all of a sudden I am back. Meanwhile I walk around and feel bad about it. So it's nice to be able to come here and spill! (still not getting the feeling for the next book/part of Nikos story....sigh, but I will come sooner or later)

I agree 100% with all you have said Roland. This is such a great site to read, write and learn. The friends I have formed are wonderful too. People come and go here like anywhere, on line and in real life. On this site, we have people like ourselves that have a love of writing, so yes we do need to support them with our votes and comments. It encourages us to keep on improving. So I will take the hint and do way better then I have been. Have to stop being lazy and make a habit of getting here and putting my two cents in.

Hi;
I have a recipe for a Master Mix for scones I would like to share with you.
I got this scone recipe from Ana Olsen's bake show. Its lovely and rich.
Then I decided to make a dry master mix to store in the cupboard.

Master Scone Mix


Ingredients:

Serves: 8 Yield:

Makes 3 batches;

6 cups flour
3/4 cup granulated sugar
3 tablespoons baking powder
3/4 teaspoon salt
3 tablespoons lemon or orange zest
1 cup butter, or margarine . cold
Directions:

1 Mix the dry ingredients and the lemon zest together.
2 Add the cold butter that has been cut into small pieces.
3 Slide your hands though the mixture making curls of the butter,.
4 ( this will make a flaky product).
5 Store in a cupboard up to one month or frig .

One batch;.

2 cups master mix.

Wet Ingredients; for one batch.

1/2 Cup whipping cream.

1/4 Cup 2% milk.

1 egg.

1 teaspoons vanilla.

Mix the wet ingredients and pour all at once into the dry. Gently mix.

with a fork and dump onto a floured counter. Fold over a few times, til.

mixed. ( can add raisins etc. at this point).

Form into a round, and cut 8 pieces, then place them onto a baking

sheet or cast iron pan. Brush tops with milk.

Bake for 20 to 25 minutes.at 375°F

Note; can roll it out into a rectangle and put the toppings on and roll.

up like a jelly roll and cut into 8 pieces, then place on sheet and bake.

as directed above.

Optional ingredients;.

Sweet;.

1 Cup raisins

1 cup dried apricots, chopped.

Savory;.

1/2 Cup bacon pieces.

1/2 c green onion, chopped.

1 Cup shredded cheese.
